Lower-carb pancakes. Chickpea “tuna” salad. Pita bread pizza.
These are just a few of the tasty, quick and healthy recipes in a cookbook created by SJC Long Island’s Peer Health Educators as part of National Nutrition Month in March.
“College life can be extremely fast-paced and overwhelming at times; our energy levels and health do not need to suffer because of this,” said Dana Storm, a Peer Health Educator and a junior double majoring in psychology and human services. “Cooking can be quick, simple and fun. We hope to make it accessible for everyone in our community!”
The cookbook, aptly named the “Cute, Quick, and College Cookbook,” was created with assistance from the Peer Health Educator Coordinator and College Nurse Kerry Vall, and the Assistant Director of Wellness Alexandra Peraino, both of whom work in the Center for Counseling and Wellness.
“College students are in need of a well-balanced diet to stay energized, but they’re always on the go,” Peraino said. “These recipes are unique, quick and accessible for students to make on their own or with friends. We loved the idea of students experimenting together to see how easy it can be to get a healthy meal in.”
A number of the meals were prepared in demonstration videos that were shared on the Center for Counseling and Wellness’ Instagram page, @sjcliwellness, showing just how easy they truly are to make.
“My favorite recipe would have to be the no-bake banana bread energy bites,” said Storm, who worked on the recipes and cookbook with fellow Peer Health Educators Katalina Paterakis ’23 and Elizabeth Lopez ’24. “All in all, it took about 15 minutes to make and was DELICIOUS! Packed with protein and with no added sugar, they are perfect for breakfast or a mid-afternoon snack that fills you up until your next meal — and it satisfies my sweet tooth!”
